Welcome back friends to our second week of muffins! I wish you could pull up a chair and join us for a few in person. Today's recipe is one of my daughter's favorites. We eat a lot of apples around here, so this one is perfect! I am pretty sure that this recipe came from a Taste of Home Magazine many years ago. Just so you know, we grind our own wheat, so anytime a recipe of mine calls for flour we are using soft white wheat. Yummy!
Apple Cream Cheese Muffins
3 oz. Cream Cheese, softened
3/4 cup sugar
2 eggs
1/2 cup milk
1/4 cup butter, melted
1 tbsp. lemon juice
1 tsp. vanilla
1 1/2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup diced, peeled apples
1/2 cup bran flakes
Mix together cream cheese, sugar, milk, eggs, butter lemon juice and vanilla until smooth.
Combine flour, baking powder, baking soda and salt.
Stir into cream cheese mixture until moist. Fold in apples and bran flakes.
Fill greased muffin tins 2/3 full. Sprinkle with cinnamon and sugar.
Bale at 375 for 20-25 minutes.

Those sound delicious! I don't buy bran flakes. Any suggestions for a substitute or just leave them out?
ReplyDeleteHilary, There are so few I would just try and lave them out. The just seem to bulk them up a lot. I haven borrowed them from the organic raisin bran box a few times! ;)
