Freezer Meals and Food Prep


It is no secret than moms are busy people.  Wake people up, get them fed and dressed, send them to school or school them yourself, clean the house, run errands, run kids to sports or lessons, fix dinner.  The list goes on and on.  And on!

Sometimes there is just seemingly not enough time in the day.  I am right there with you!

Through the years, in an effort to lighten my load and preserve my sanity, I have tried to find little ways to help make my life easier.  Especially when it comes to cooking.  As a homeschooling mom, I typically fix THREE meals a day.  Sometimes more, sometimes less, but you get the idea.  That is a lot of time in the kitchen.  A lot!   

One way to do that, especially in certain seasons in my life, has been freezer meals and meal prep.

Let's start with freezer meals.

There are lots of programs and subscriptions out there, but the main idea is fix things ahead of time in a large prep day and freeze.  Then when you are busy you can just pull a prepared meal out of the freezer and go.  While many of those meals advertised are crock pot friendly, they do not have to be!  I have many "packet" meals in my freezer that are defrosted the night before and cooked on the grill, as well as skillet meals and casseroles to pop in the oven.  The main point is the timely prep is already done and you just have to factor in cooking time. 

The last time I did a freezer cooking prep I froze 12 meals (two of 6 different recipes) and 13 "just meat" bags. (pork loins, pork chops, hamburgers, chicken breasts, rotisserie chicken, fish and ground beef.)

That equated to 25 freezer meals at a cost of about $5.04 each for meat.



 
I will tell you that the MyFreezEasy plan is one of the best I have used.  (NOT an affiliate, just sharing!)  With a subscription you get monthly meal ideas and are able to mix and match as you like, as well as adjust your serving size to fit your family.   Erin Chase, creator of the $5 Dollar Dinners and MyFreezEasy, provides amazing options to include Keto, and Paleo/Whole30, clean eating, and kid    friendly meals.  Once you choose the meals you want to fix for the week or month, you print the menus, shopping lists, and directions and you are ready to go!  SO SIMPLE! 




I usually choose 4-6 recipes (each recipe makes two meals) to make each month and freeze so I always have a good selection in my freezer.  Our family typically uses them twice a week.


As far as further meal prep, I have blogged on this before.  Here are a few of my basic recommendations-

  • Buy rotisserie chickens!  I used to cook whole chickens myself, but since we do not have access to our own chickens at the moment, I have found Costco chickens to be a life saver.  I buy two each month for less than $5.00 a piece and come home and immediately de-bone them and freeze.  Two chickens yield 4 freezer packs of meat for our family!  We use them in casseroles, salads, tacos, stir fry, and soups!

  • Brown meats ahead of time.  I am not always good at this, but at the very least buy in bulk and separate into meal size packages.  If you have time when you first get home with ground beef, go on and brown it up and freeze in batches. It will save you time in the long run!
  • Shape and freeze hamburger patties. Again, saves you time on a busy night!
  • Filet chicken breasts.  First it saves you money!  And secondly, it yields a more appropriate serving size of 4-6 ounces of meat!

Menu Masterlist: Odds and Ends


Happy Monday!

So let me tell you why this is posting late.  Nothing like driving yourself crazy looking for the last list and not being able to find it, to then remember that you had worked ahead and actually already typed it up.

It's been that kind of week, folks!  And when all of your desk has been packed into a briefcase things get a little crazy.  More of the crazy talk on the blog on Friday! ;)

Anyway...

This is actually one of my favorite lists.  It does include breakfast foods which we try to do once a week.  It is just a fun break, my husband often cooks it, and it saves money.  Win, win, win!

Menu Masterlist: Pork

OK, my lovely friends- this week's Masterlist is going to be a quick one for two reasons.  One- we just staged, listed and SOLD our house in one week and I am exhausted.  I mean bone weary tired.  (more on that on Friday!) 

And two- we do not eat a lot of pork here, hence the short Masterlist. 

We even gave up pork for about a year when we were eating mostly organic and following a strict eating plan, but to be honest- our family likes ham and bacon and well, we caved.

That being said, we do eat it on a limited basis so here is my small list. 


I would love for you to share with us your favorite pork dish!  Next week we have our odds and ends list- it is my favorite!!

Menu Masterlist: Soup


Welcome back to our Menu Masterlist Series.  So far we have covered Chicken and Beef, so today let's talk soup!

If you don't already know our family, you need to know you will not find a lot of fancy tastes around here.  Simple is the key!  Because of that, our list is pretty short and sweet,

We often go out to eat with various church friends on Sundays, so recently I have begun just fixing a simple soup for dinner Sunday night.  We are usually not as hungry after just eating a big meal and let's be honest, it is the end of a week and mom is tired.

Any leftovers make for a perfect Monday lunch!

Remember to use these lists to get you thinking about your family's favorite meals.  Make your own list or just modify these and then use them to help you better meal plan.  By planning you will save money and save yourself the stress of last minute prep.

Menu Masterlist: Chicken

OK friends, I have showed you several months of menus from our home and now it is time to fly on your own!  I have created a Masterlist for each type of food we eat to help you with planning, as well as a Planning and Shopping Template to help you along.


Keep in mind, these are the foods my family likes.  If there is something you are not as fond of, cross it out and add your own.  No worries!

The point is to have a quick reference to make your life easier!

Instead of racking your brain on what to eat for the week you just go down each list and see what sounds good.

Yes, I do have cookbooks that I sometimes refer to, but I have found that we tend to revert back to old favorites and at this point in my life adding new, fancy things to our table is not my goal.

As I heard recently, we are eating to live, not living to eat.  I would rather concentrate on the people I eat with rather than the food in front of us.

This week we will start with Chicken Dishes, as I know that is pretty staple in most diets.  I do have some chicken dishes that go into the crockpot, but we will post those meals on a separate Masterlist for you in the weeks to come.


If you want to use this list for reference, I would recommend saving the graphic on your computer and then print it off.  If you slip it into a page protector, you can check meals off as you go to ensure you do not get into a rut of cooking the same thing all of the time.  It happens to the best of us!


And to make it all official (so when your small child asks you for the hundredth time in the morning what is for dinner) (just saying!) you can send them to the chart. Here is a menu planning sheet for you.  Write your menu on the left and then any ingredients you will need for that particular meal.  I then fold the sheet in half long ways and head off to the grocery store to shop.  Just make sure said sheet makes it back home or you will be lost as to what you planned on making with all those beautiful ingredients.  (Again, just saying!)

Monday Menu and Some Chinese Food





March is upon us!  Yay for slightly warmer temps (though we are supposed to get some snow tomorrow possibly) and for Spring Break!  We will take next week off from school and enjoy having our college girl home.  Can't wait!!


So while I count down the days until her plane lands, here is our menu for the week-

Monday-  Pork Marsala

Tuesday- Beef and Broccoli

Wednesday- Hamburgers

Thursday- Sweet and Sour Chicken

Friday- Baked Fish

Saturday- Hawaiian Chicken Kabobs

Sunday-  Soup

Have I told you we have a love of Chinese food around here?  Years ago, Ashton asked for a wok for Christmas and we were hooked.  We were actually hooked long before the wok, but at least after that addition we started to explore the option of cooking Chinese food at home and not always going out to enjoy it.  Some recipes are admittedly more authentic than others, but we are not picky so you will find some rather easy ones in our stash!  This week's recipe is one of those short and sweet ones- literally!

Enjoy!



Sweet and Sour Chicken

ingredients:


  • 1 package of chicken breasts, diced
  • 2 TBSP olive oil
  • 1 clove garlic, crushed
  • 1- 8 oz. pineapple chunks
  • 1 TBSP vinegar
  • 1 TBSP brown sugar
  • 1 tsp. ground ginger

instructions:


  1. Saute diced chicken and garlic in olive oil until cooked through
  2. Combine cornstarch and soy sauce and add to chicken, mixing well
  3. Add to chicken, pineapple, vinegar, brown sugar and ginger, stirring well.
  4. Bring to boil, reduce heat and simmer until thick, 5-10 minutes
  5. Serve over rice!

Monday Menu and Pork Chops




It's Monday!  Again!  Why do Mondays always seem to sneak up on me?  I do not think we made weekends long enough and really should revisit that!  Anyone with me?


In the meantime, here is our week's menu- we have to eat after all!

Monday- Chicken on the grill

Tuesday- Meatball Parmesan casserole

Wednesday- Chicken quesadillas

Thursday- Pancakes and bacon

Friday- Chicken Divan

Saturday- Pizza

Sunday- Creamy Chicken Wild Rice soup


This week's recipe is a favorite from a friend of a friend!  Simple but yummy- the best kind of recipe in my opinion.  If you do not want to use canned soup, you can make your own base to add.  I have done it both ways and been happy either way!


Easy Pork Chop Casserole

ingredients:


  • 6 pork chops
  • 1/2 tsp. salt
  • 1 can cream of mushroom soup
  • 1 1/2 C water
  • 3 TBSP flour
  • dash paper

instructions:


  1. Dredge pork chops in flour, salt and pepper
  2. Brown pork chops on both sides in 2 TBSP. butter
  3. Place pork chops in casserole dish.
  4. Pour soup into skillet, add water and heat.  Add to pork chops.
  5. Cover and bake at 350 for 1 1/2 hours

Monday Menu and a Cheat Week


Sometimes I am so proud of myself and feel such a sense of accomplishment when I put a dinner on the table. (everyone needs a YAY ME, self -cheering section!)  Other days I cannot believe I am standing in the kitchen AGAIN fixing ANOTHER meal!

This last week has been on of the later kind of weeks.  I just felt plain tired.  And uninspired.  And so tired of food!

Good news- some of my peeps are headed out of town (that is not the good news) and for a few days it is just Colby and me.  (that is the good news as far as cooking goes.)

So I am planning a few EASY days and I am treating him, Ok, me, to a date night.  Don't get too excited- right now his request is KFC!  I know, I know, don't even go there.  Sometimes you just smile and say ok, right?

Monday- Baked Chicken

Tuesday- Stuffed Baked Potatoes

Wednesday- Tacos

Thursday- Crock Pot French Dip

Friday- Care Group Meets- Making Ham sliders

Saturday- Date Night with my Boy

Monday Menu and a Little Red Meat





Welcome back to another Monday Menu!  In line with the current cold weather we are having, there are TWO crock pot meals planned.  We pray you have a beautiful week- stay warm!


Monday- Lasagna

Tuesday- Creamy Chicken Marsala

Wednesday- Slow Cooker Beef Tips and Gravy

Thursday- Slow Cooker Chicken BBQ

Friday- Baked Ham

Saturday- Bacon, Eggs and Biscuits

Sunday- Cheeseburger Soup

And one of our favorite ground beef recipes-

Salisbury Steaks in Wine Sauce

ingredients:


  • 2 lbs. ground beef
  • 1/4 C. chopped onion
  • 1 C. rolled oats
  • 2 TBSP Worcestershire sauce
  • 1 C. Milk
  • 3 TSP flour
  • 1 cup water
  • 1/2 C red cooking wine
  • 1 beef bouillon cube
  • 1 (4oz) can mushrooms

instructions:


  1. Combine the beef, onions, oats, Worcestershire sauce and milk.  Mix well
  2. Make 8 patties.  Heat 2 TBSP oil an brown patties.  Remove from heat
  3. Stir flour into pan.  Add water and bouillon cube, cook until smooth and thick.
  4. Stir in wine and mushrooms.
  5. Return patties to pan, cover and simmer until meat is done.

Monday Menu and a Crockpot Favorite


How is it already Monday again?  Seriously, do you ever feel like all you do is fix food for people who won't stop eating?  I told my hubby this week that when it is just the two of us (it will come someday I tell you) I am fixing one big meal and we are eating it all week.  Check back in 10 years and see what is on our plates! ;)

Until then, I have people that need to be fed so here is another week of our menu, keeping in mind we plan simple to save time, money, and let's face it, my sanity!

Monday- Honey Teriyaki Chicken (thanks Beth!)

Tuesday- Salisbury Steak

Wednesday- Turkey Taco Cups

Thursday- Chicken Curry

Friday- Dinner out

Saturday- Mini Ham and Cheese Frittatas

Sunday- Southwestern Chicken Chowder

There happens to be no crock pot meals this week, but you know I love my crock pot and use it often.  I love the ease and the feeling of accomplishment so early in the day, and I love the smell of a home cooked meal filling the house, especially on cold days.

Because of that and because I know some of you are buried under snow again, here is a crock pot favorite we got from a friend.
 

Creamy Scalloped Ham and Potatoes

prep time: 15 MINScook time: 6 hourtotal time: 6 hours and 15 mins

ingredients:


  • 2 lbs. potatoes (about 6)
  • 2-3 cups cubed ham
  • 1/2 small onion, sliced
  • 1/4 c flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 TBSP butter, melted
  • 1 can cream of mushroom soup
  • 1 cup Shredded Cheddar Cheese
  • 1/4 tsp cream of tarter

instructions:


  1. Wash and thinly slice potatoes
  2. Toss potatoes in 1 cup water and cream of tarter, drain
  3. Layer potatoes, ham, and onions in crock pot
  4. Sprinkle with flour, salt, and pepper
  5. Repeat layers!
  6. Mix melted butter with soup and pour over the top.
  7. Cook on low 6-8  hours, adding cheese the last 30 minutes.

Monday Menu and a Breakfast Treat



Happy Monday!  Welcome back to another week of meals!  With my girl headed off to college again, we will be back to feeding 5 for a while.  Ignore me while I go pout!

We have loved planning soup for Sunday nights- a great way to relax and have a simple meal after a big Sunday lunch. This week we are going to try to incorporate breakfast into one meal as well.  My family loves breakfast food and by having it for dinner, it is often a good way to save some money.  I will let you know how it goes over.


Monday- Spaghetti Pie

Tuesday- Pork Chop Casserole

Wednesday- B-B-Q Chicken

Thursday- Breakfast Pizza

Friday- Care Group Night (not sure what I am making to share)

Saturday- Chicken a la Orange

Sunday- Broccoli Cheddar Soup

Breakfast Pizza

prep time: cook time: total time:

ingredients:


  • 1 package crescent rolls
  • 6-8  oz. sausage
  • 1 c. frozen hash browns
  • 3 TBSP butter
  • 3 eggs, beaten
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 shredded cheddar cheese

instructions:


  1. Spread pan with rolls
  2. Cook sausage, drain
  3. Cook hash browns in 2 tsp. butter
  4. Cook eggs in 1 tsp. butter
  5. Layer sausage, hash browns, and eggs on rolls. Season with salt and pepper
  6. Top with cheese
  7. Bake at 350 for 20 minutes

Monday Menu


What a full week we have had.  Despite having the week off of school, we have been in constant motion.  I am once again reminded that we can easily fill our lives with busyness and must be deliberate to schedule and then protect our quiet time.

After this week of appointments and my mile long things to do list, I am going to do just that! ;)

This week's menu is another simple one for you!  Remember, I am feeding a real life family with kids, not connoisseurs of fine tastes!  I want to spend less time in the kitchen and more time with them, especially seeing how fleeting our time together is.  They grow up fast, my friends!

Monday- Orange Chicken

Tuesday- Off to eat with friends, you are on your own!

Wednesday- Turkey Enchiladas


Thursday- Asian Lettuce wraps

Friday- Spaghetti

Saturday- Pork loin (crock pot)

Sunday- Broccoli Cheese Soup

Let me tell you about our turkey savings before I share a recipe for the week.  Thanks to one of those handy shoppers cards at our local grocery store, I paid a little over $10.00 for a 19 pound turkey.  We had thanksgiving (7 of us), and then a second turkey meal with it the following night.  It also fed four people lunch with turkey sliders the following day.  Since then, I have chopped up the remaining meat and frozen 3- 2 1/2 cup portions(one to be used this week in the enchiladas) and used 2 Cups in our Sunday Soup. (recipe below)


Yes, that is 6 full meals and one quick lunch with ONE turkey!   That is about $1.66 per meal!  FOR MEAT!!

The holidays are a perfect time to stock your freezer when turkeys and chickens are rock bottom prices to save your budget the rest of the year!  With a little prep and planning, you can have meat ready and waiting to pop in a meal.  Win win!



Turkey Rice Soup

ingredients:


  • 4 TBSP butter, divided
  • 1/2 onion, chopped
  • 1 stalk celery, chopped
  • 1 tsp sage
  • 4 TBSP flour
  • 5 cups chicken or turkey stock
  • 3/4 cup rice
  • 1 C sliced mushrooms (optional)
  • 2 C diced cooked turkey
  • 1 C heavy cream
  • 1 C milk
  • Salt and pepper to taste

instructions:


  1. Melt 3 TBSP butter and add celery, onion and sage- saute 3-4 minutes.
  2. Stir in flour and cook for 2 minutes, stirring.
  3. Add stock, stirring to combine and bring to a boil.
  4. Stir in rice  and season with salt and pepper, bring to boil and simmer for 30 minutes.
  5. Meanwhile, saute sliced mushrooms in 1 TBSP of butter.
  6. Add turkey, cream, milk, and mushrooms to soup, simmering for about 10 minutes or heated through.

Monday Menu

Welcome back to another Monday Menu!  We are glad you are here.


Remember, this is what my family is actually eating for the week and are planned with kids in mind.  Simplicity is the key, you will not find many fancy things here.  For years I tried to keep up with the Joneses and then I realized there was no reason to try to impress anyone, especially my own family, with dinner.  It is more about sustenance and family time, and less about fancy ingredients and meals no one likes.

So this week, here is what we have cooking-

Monday- Orange- honey Teriyaki Chicken

Tuesday- Scalloped ham and potatoes (slow cooker)

Wednesday- Chicken Lo Mein

Thursday- Chicken in Wine sauce- (slow cooker)

Friday- Out to eat

Saturday- Farmer's casserole

Sunday- Cheeseburger Soup

Let's talk savings for a minutes before I give you a recipe from last week's meal plan.

  • You may notice that often we plan chicken meals twice a week.  (I know, this week is three)  The reason for this is simple.  I buy a large package of chicken from the commissary (you can find them at Sam's Club as well) and then immediately bring it home and slice each breast in half and then freeze those in portions that fit our family.  One, it saves money and two, it gives you a more reasonable sized chicken breast that is also faster and easier to cook.  So in theory, each large pack of chicken I buy feeds us for four meals.  
  • I also found THE deal of the year recently when I bought an entire 10 pound bag of diced ham for $10.  (Notice the scalloped ham and potatoes and the framers casserole in the menu!)  I freeze the ham in two cup servings and then use in simple casseroles, for breakfast meals, and even in fried rice!  It will last us for a long time and saves a HUGE amount of money as well!
  • Be on the lookout for your local sales and stock up on meat when you see it at good prices.  Then plan your menu around what you have in the freezer.  Make sure you freeze things in family-sized portions to make it easier to pull out and use. 
  • You will also notice that we have started doing soups or sandwiches for most Sundays.  Easy for me who needs a break, and cost effective because let's face it, most soups are pretty inexpensive to make.  It's a win win, especially in the fall and winter seasons.

Honey Chicken Skewers

ingredients:


  • 1/2 Cup Ketchup
  • 3 TBSP honey
  • 1 TBSP Worcestershire sauce
  • 1 1/2 lbs. chicken breasts, cubed
  • salt and pepper to taste

instructions


  1. Combine ketchup, honey, Worcestershire sauce, and salt and pepper.
  2. Marinate chicken in sauce.
  3. Put chicken on skewers and cook on grill 6-8 minutes, basting with sauce.

Monday Menu wth NEW printable recipe!!


Happy Monday, my friends!  We are back in town and ready to cook again!  And yes, thanks to the encouragement of a new friend, Lanie, and the help of an old blogging friend Kemi, I have finally managed to put a recipe in a printable form for YOU!!  My plan is to feature one recipe each week- first one up is from last week- pulled pork.

You also might notice that things get pretty simple by the end of this week, as my hero husband will be out of town and well, when he is not around to feed, the kids and I go simple.  Welcome to my real life and true confessions! ;)

So this week's plan is-

Monday- Honey glazed chicken thighs (grill)

Tuesday- OUT TO EAT


Wednesday- Breakfast! ( pancakes, bacon and fruit)

Thursday- Spaghetti

Friday- Nachos

Saturday- Ham

Sunday- Potato soup

YES!  We are going out to eat on Tuesday!  We don't typically do that during the week, but this is a yearly tradition.  We do not participate in Halloween, so each year the family tradition to go out to eat Chinese food instead.  It gets us out of the house so we do not feel like we are hiding, and it is just a fun thing we have come to look forward to as a family.

Pulled Pork

INGREDIENTS:


  • 1 3-4 lb. pork roast
  • 1 can French onion soup
  • 1 Cup ketchup
  • 1/2 Cup cider vinegar
  • 3 TBSP brown sugar

INSTRUCTIONS:


  1. Place roast in slow cooker.
  2. Combine remaining ingredients and our over roast.
  3. Cover and cook 4-5 hours on high, or 8-10 hours on low.
  4. Shred pork and cook an additional 10-20 minutes.

Monday Menu





Happy Monday, friends!  Can you believe another Monday is here?  As you read this, I am still on the road, headed home from Mississippi after visiting our daughter in college. (look for pictures and an update on her on Friday!) 


Luckily for us, the dear girl who watched our house and dogs for us while we were gone is also  putting our dinner in the crockpot for us so when we walk through the door the house will smell good and we won't resort to more fast food. 

Gotta love a crock pot!  How often do you use yours?

Tuesday- Soy Glazed Fish and Bok Choy

Sunday- Grilled Ham and Cheese Sandwiches

You may have noticed that I tend to do soup or sandwiches for Sunday.  We usually eat out with friends after church and by the time we get back, mom is full and done! ;)  So we typically eat light and late in the evenings.  I consider it my "day off."

It's that time again!

Sometimes menu planning is a breeze for me, other times I can sit and stare at a blank plan for a very long time.  I am going to be honest, food does not impress me much these days.  Since my gall bladder surgery at the end of June, I have struggled with severe stomach issues.  Yep, traded in the gallbladder for a new problem.  Nice huh?

But despite my lack of interest in food, my family does need to eat, so I am trying to stay on the cooking bandwagon.  Meal planning helps keep me accountable, and as someone mentioned last week, it DOES help save money!

For example, this week I saw turkey breasts on sale for .99/lb.  Yes, I got a $30 turkey breast for a about $8.  Well, actually I got 5 of them!  Stocking up on deals can equal huge savings.  Plus, because of their size, one of those turkeys will feed us for three meals as you will see with this week's menu.  I also love to keep things like that on hand for unexpected times when I feed others through our church's meal ministry.

So here we go-

Monday- Chicken Stir Fry

Tuesday- Sliced Turkey

Wednesday- Flounder (because a certain child who does not love seafood will not be eating with us!)

Thursday- Turkey Enchiladas

Friday- Hamburger Gravy


Saturday- Spaghetti

Sunday- Turkey and Wild Rice Soup

See, easy peasy!
