Monday Menu and one of our FAVORITE Chicken Recipes


Welcome back to Monday Menu, friends!  Why does it seem like my weeks just keep speeding by?  Anyone else feel the same?

This week is a slower one for me and I am excited to have some down time.  Per my goals for 2018, I am trying to enjoy each moment and not get caught up in the craziness of life.

So for this week- SIMPLE is the plan.  OK, most weeks simple is my plan, but this week you might even say boring! ;)

Monday- Hamburgers

Tuesday- Turkey Breast in the Crockpot

Wednesday- Turkey Enchiladas

Thursday- Apricot French Toast

Friday- Care Group (taking something, but not sure what yet! Maybe taco ring!)

Saturday- Nachos

Sunday- Ham and Cheese Sliders (I know this veers away from my Sunday Soup plan, but my boys asked for "fun food" for the football game, so I am trying to please.)

Here is this week's recipe- one I have had forever, but is still a favorite in our house.  Very easy to make!




Chicken in White Wine Sauce

prep time: 5 MINScook time: 30 MINStotal time: 35 mins

ingredients:


  • 3 TBSP Flour
  • 1/4  tsp. each- salt, pepper, paprika
  • 6 chicken breasts
  • 2 tsp. olive oil
  • 3/4 cup chicken broth
  • 3/4 cup white cooking wine
  • 5 tsp. Parmesan cheese

instructions:


  1. In plastic bag, mix flour, salt, pepper, paprika- add chicken and shake to coat
  2. Brown chicken in oil 1-2 minutes per side
  3. Add broth and cooking wine and bring to a boil.
  4. Place chicken in baking dish and cover.
  5. Bake at 350 for 20-30  minutes.
  6. Sprinkle with Parmesan cheese before serving

Monday Menu- The One With No Recipe!





Yep, call me lazy, but there is no magical recipe today.  So sorry for that, but life happens and this past week has been a crazy one and quite honestly, it is a miracle that this week's menu got planned.


I have managed however to put up two Christmas trees, though the tree skirts have not been unboxed yet so they look a little stark.  A wreath is on the front door, but other than that my house is sadly lacking much festivity.  Busy and unmotivated is my excuse.  That on top of the fact that apparently when you work so hard to simplify and declutter all of a sudden filling ones house with more stuff seems not so magical.

I will let you know if I find a happy medium!

Anyway, on to the menu!  Many nights will just be four of us, so we are keeping in simple this week.

Monday- Breakfast Burritos

Tuesday- Chicken Stir Fry

Wednesday- Leftovers from the freezer

Thursday- Chicken Nachos (crock pot)

Friday- Homemade Pizza

Saturday- Hamburgers on the grill

Sunday- Potato Soup


Have you noticed our Sundays have turned into Soup Sundays?  It is simple, and homey and I love it!  You may start seeing the same soups over and over again, as there are only so many my family likes, but we are fine with that.  If you have a tried and true recipe I would love for you to share it with us!  After a busy week and usually an equally busy weekend and lunch out on most Sundays, it is nice to cozy up as a family with a warm bowl of soup in the evening.

Monday Menu Meets the Freezer


Another week, another menu!  Does anyone else feel like they spend a lot of their days in the kitchen?  Thankfully with a planned menu in hand it does cut down on the time a little.  Hey, I will take what I can get.

This week two of the recipes we are using, both new to us, were specifically chosen with saving time in mind.  A blogging friend raved about a cookbook called, Fix, Freeze and Feast so I broke down and ordered it from Amazon.  With over 125 recipes, it concentrates on meal prep in bulk and then freezing for later meals.  One thing I like is the simplicity of it.  Some meal recipes only make two serving , while some make 4 plus.  But none are made to break the bank or consume all your day cooking in the kitchen.  Instead of making them all at once, I am choosing one or two a week for a while, eating one immediately and freezing the others for later use, whether for us or to bless someone in need.

I also love that the recipes are simple to make and are family friendly. (think picky kids!)  There are also cooking instructions included you can print off and tape to the extras that go in the freezer for easy reference when cooking time comes.  How cool is that?!

So here we go!

Monday- Italian Chicken


Tuesday- Rose City Teriyaki (from Fix, Freeze & Feast)

Wednesday- Chicken Cordon Bleu (from Fix, Freeze & Feast)

Thursday- Left overs

Friday- Chicken Quesadillas


Saturday- Hamburgers


Sunday- Baked Potato Chowder

And for an easy recipe-

Italian Chicken

Cover Chicken Breasts in Italian dressing and generously sprinkle with garlic salt. 
Bake covered for 45 minutes at 375. 

Yep, that's it! ;)


Told you it was easy.  I often put it in the crock pot as well.  If you prep meals once a month, this is an easy one to freeze in a baggie and is simple to pull out and cook quickly!

Monday Menu Take 3!


Welcome back!  If you missed our first two weeks of menus, you can find the first week here and the second week here!  So glad you came along for the ride, and thanks to all of you who have left your menus for us on the blog FB page.  You have inspired me to think outside the box.  Or to book plane tickets to YOUR houses! ;)

This week the kids and I will be traveling for a few days, but I will be leaving food for my hero so I will give you the full menu.  If we ever miss a meal we often just move it to the next week.  If one meal doesn't line up well with our day, we simply swap it.  Just like any schedule, let it work for you, not complicate your life even more so.

As fall gets closer, I know it is out there somewhere, you will notice our crockpot gets put to more use.  One, because I love the smell of cooking food all day because of the comfy factor and two, it makes my life easier when I have been teaching the boys all day and then have other things to do.  Like I said earlier, for us- food is about need, not about show.  We love our family time at the table, but I want it to be centered on whom we are eating with, not what we are eating.

This week-

Monday- Chili
Tuesday- Hamburgers
Wednesday-  Chicken Pot Pie
Thursday- Pizza
Friday- Beef Stroganoff (recipe posted last week!)
Saturday- B- B- Q Chicken (crockpot)
Sunday- Nacho Chicken Dip (crockpot)


A recipe for you all this week- Chicken Pot Pie!  This came from a dear friend of mine a long time ago.  As a military wife that took food to people a lot, this became my standby.  It is great for those who just had surgery or are sick, as well as for new nursing moms who can't do spicy.  Comfort food at its finest.  It is also a dump and go recipe.  I often add additional veggies to it and have been known to make it only with fresh veggies and make my own cream sauces, but let's face it, sometime simple and easy is what we need!  Enjoy-

Chicken Pot Pie

1 can Cream of Potato Soup
1 can Cream Of Chicken Soup
16 oz. can of Veg-all
1 small can of mushrooms
2 C. cooked chicken, shredded
1/2 tsp Thyme
1/2 tsp.pepper
1/2 tsp. of paprika
1 pie crust

Combine all the ingredients and spoon into a pie crust.  Cover with top crust, seal and vent.
Cook at 375 for 45 minutes.
Let sit 15-20 minutes before serving.

Introducing- Monday Menu

Now that 34 weeks of Clean is done, I have been looking for something to consistently post for a while.  Continual sickness here at home has limited my writing time, but hey, I do have to plan to eat, right?

So here's the plan- 

I will post our proposed menu for the week, knowing it can always change.  In other words, if you like what you see and want to show up for dinner, call first!  I may have opted for something else! ;)

For the most part, side dishes will not be mentioned.  That is one area I tend to be more flexible on.  I grab veggies out of the fridge I got on sale for the week, and we eat salads A LOT!

For now I am steering clear of recipes, but may start to feature one a week if the interest is there.  Let me know what you think!

You will not find leftovers listed here often.  Not because we do not have them, but because we usually eat them for lunch.  Because we homeschool and are not big bread people due to our oldest being gluten free for so long, sandwiches rarely happen, left overs do!

This is to hold me accountable and maybe help a few of you out at the same time.  While I do not expect everyone to love what we eat, I know that sometimes just a few ideas or even reminders of long-lost favorites can be helpful.

DO NOT expect fancy.  I am not a fancy person.  I feed a family of 6, four of which are kids or young adults.  Several are more picky than others and some are in and out a lot.  My goal is not to impress them, but to just feed them.  If you are looking for complicated meals you are in the wrong place.  Family friendly it is!

TUESDAY- Butter Chicken (new recipe, I will let you know how it goes!)

WEDNESDAY- Baked Pork Chops


THURSDAY- Tacos

FRIDAY-  Grilled Chicken


SATURDAY- Breakfast for dinner (probably pancakes and bacon and fruit!)


SUNDAY- Chicken Corn Chowder (crockpot)
