Monday Menu- The Short List



Good morning, my friends!  The sun is shining BIG today and it is the start of a great week for us!

But a great week for us, means a short menu for you! ;)

You see, we are headed out in a few days to see Riley, daughter #2, in her college performance of Into the Woods!  No worries, the dogs and the house are being well watched!

The exciting part is that means I only have to, I mean will, cook three days this week.

Well, the other exciting part is seeing this cute face!


Excuse me while I do a party dance!

Don't get me wrong, I do love cooking for my family, but sometimes it is nice to have a little break.  Plus let's face it, it only takes a few meals out to make you appreciate home cooked ones even more!  So on that note-

Our short list-

Monday- Egg rolls and Fried rice

Tuesday- Meatballs

Wednesday- Breakfast Burritos

Monday Menu is Back!

Well, obviously I am friends with a lot of people who like food!  Or maybe just need some inspiration.  But either way our first Monday Menu was such a hit, that we have decided to keep it up for a while!

Remember, my goal is simple meals that most people (my kids!) will eat.  I am not including sides because we buy veggies and such around sales, so I just typically grab what I have around and add a salad.  Yes, we eat a lot of salads!

Oh, and yes, the Butter Chicken recipe was quite good!  You can find it at Keto Connect.  My family approved and they are pretty picky Indian food kids.  We would never have said we liked Indian food until our friends bought an Indian food restaurant and grocery store in Brookings, SD.  If you are ever driving through there, look up Flavor!  You will be glad you did.  Tell them I sent you and have an extra bite for me!




This week-

Monday- Chicken Noodle Casserole  (I will put a whole chicken in the crockpot and use half for this meal and half for Thursday's meal!)

Tuesday- B-B-Q Meatballs

Wednesday- Hot Ham and Cheese Sandwiches

Thursday- Chicken Tetrazzini

Friday- Pork Roast

Saturday- Pulled Pork Sandwiches (using left over pork from Friday)

Sunday- Broccoli-Cheese Soup


A few notes- Yes, I used a whole chicken to do two meals and a pork roast to make 2 others.  It's all about saving money folks!

Yes, I tend to do a lot of soups on Sunday.  We often go out to eat with friends after church, so it is easy to pop soup in the crock pot for later and it is a lighter meal after a bigger lunch.  

And because I love you - a recipe for you!  It is one of our favorites and is on the menu for next week so I thought I would give you a heads up on the ingredients if you want to join us.  My mom made this all through my childhood and it makes me smile every time I make it.

Beef Stroganoff

2 TBSP Butter

2 TBSP Flour
2 C Water
3 Beef Bouillon cubes
2 TBSP Tomato Paste
Sprinkle of garlic powder
4 C of diced cooked beef tips
1 C Mushrooms
1/4 C Sour Cream
Salt and Pepper

Melt butter, stir in flour and cook over low for 3 minutes.  

Stir in water and add bouillon cubes.  
Cook, stirring, until thickened.  
Add tomato paste, garlic powder, beef, mushrooms, salt and pepper.  
Mix well.  
Stir in sour cream, heat well.
Serve over noodles.


That's it!  I usually pop the beef in the crockpot in the morning so it is ready to use when I start dinner to save time!

Dinner's In the Freezer


It's almost that time of year again.  Can you feel it?  The temperatures are dropping a bit, school supplies are taking over the stores, and calendars are starting to fill up with events.  Yes, fall is coming and so is what I call "The Crazy Season."

A time when mom is pulled in a hundred, maybe a thousand, different directions and many evenings I just long for a quiet place to land and read good book.

But hold on, those people of mine want to E-A-T!  Can you even believe it?

Thankfully, during the busy seasons of life my slow cooker and my freezer have become my best friends.  With very little planning and even less effort, I can grab a baggie out of the freezer, pop it in my slow cooker in the morning right after breakfast, and there is a hot meal ready for dinner.  This is especially good for days that are crazy, days that we have "after school" events, or days that mom has reached her stopping point.  Yes, that about covers all days, right?!

There are countless ways to freezer cook and you can find many articles and recipes relating to that process.  What I want to share with you is not the process as much as just a few of our fast, easy, and no-frills meals.  We are not fancy around here.  I have four kids who have many distinct likes and dislikes.  I gave up trying to keep up with the Joneses and their menus years ago.  Simple is the name of the game here!

But blessings is the other name!  Freezing simple meals ahead of time that can be popped in a slow cooker, providing hours of yummy smells and at least ten minutes of yummy dinner time (does anyone have a fast eater???) has indeed blessed me.  It frequently takes the stress out of my day, saves me time in the kitchen, allows us to save money by avoiding those last minute "let's just order something in" panics, and provides a more nutritional choice for a meal.

Here we go!

Chicken Meals
  • Italian chicken- Just pop chicken breasts in a baggie, pour half of a bottle of Italian dressing in with a tablespoon of garlic salt.  Seal, shake and lay flat to freeze.  Pop it in the slow cooker on low for 8 hours and you are ready to go!
  • Chicken and Rice- Pop chicken breasts in a baggie with a can of cream of mushroom soup (or your own homemade) and a half cup of water. Lay flat to freeze! Cook on low for 8 hours, adding uncooked instant rice the last 20 minutes.
  • Shredded chicken- Spend a free day cooking chicken and then freeze in two cup portions for the following meals- Quesadillas, stuffed baked potatoes, tacos, enchiladas, and soups (add noodles or rice last 20-30 minutes)

Red Meat Ideas
  • Shape meatballs and freeze with your favorite sauce (b-b-q, teriyaki). Cook on low 8 hours.
  • Shape meatloaves and freeze.  Simply put in slow cooker and cook on low 8 hours.
  • Freeze spaghetti sauce and cook on low 8 hours!
  • Cook hamburger meat and freeze in two cup servings for the following meals- (you can add spices when you freeze or as you put your meat in the slow cooker) tacos, chili, taco salad or Sloppy Joes.

Pork Ideas
  • A large pork loin found at our local large food club can easily make three or four meals for us depending on how we use it.  Cut it into how ever many pieces is right for your size family and freeze with a marinade.  (We love Italian dressing, b-b-q, and teriyaki the best!)
  • You can then cook the pieces in the slow cooker for 8 hours and use the following ways- As the main meal, over rice, on baked potatoes, as sandwiches!

See?  I told you the ideas are endless!  For the most part, there are not many foods that do not freeze well, and even less that you cannot cook in a slow cooker.  No need to make it complicated, just make it and freeze it and watch your meal time stress melt away as you go about your busy day!

Disney's Characters and Cookies!


OK, yes, we were there for 7 days, but I figured you would want the abbreviated version!  (You are most welcome!)  So for today, I will focus on the characters and the FOOD!  Lots and lots of food.

On previous trips, we have not been obsessed with hunting down characters  Well, one child has, but she got out-voted almost every single time.  Who has time to stand in line to see someone in a costume when there are rides to ride?!  But this time around, we made a lot of exceptions.  And even used fast passes to get pictures taken.  Yes, you can use fast passes to see some characters.  Crazy, I know!


Fur creatures, as Disney calls these fuzzy guys, are all over.  Come to find out, they even camp out in hard to find places off the beaten paths.  By simply referring to a few Disney books on the market or even asking a cast member, you can find these places and wait only minutes to interact with them.

Like playing steal the kid's hat with Chip.  Or Dale.


Face characters, see their lovely faces, seem to be more scheduled and waits are often longer, but we walked right up to several this visit and I do not think we waited in line for more than 15 minutes for any of them.

It is amazing how personable they are and how they act like you are the most importanat person in their lives at that moment!  Actual conversation here-

Alice: And what is your major at Monster's University? (Referring to CJ's hat)
CJ: Scaring. and eating children!
Alice: Oh my. You must work for the Red Queen!

One of the easiest places to see several characters at once is at a character meal.  If your child thinks they are a princess too, just saying, then making reservations at one of those restaurants is totally worth the money!


Note from Riley- Rapunzel loved my shirt and called me flower. When we left she told me to have a good time outside of my tower!


And as silly as it may seem to some of us, even the big kids can have fun!


Like once you have seen a million face characters, you realize they all do the same face thing right before they take a picture - they big grin and raise their eyebrows.  Every single one.  We saw it so many times that the big kids started to practice too! ;)  See why I said it was more fun to go to Disney with big kids?



Oh, and about the food!  As I mentioned before, I feel like we ate our way through Disney.  Though I have to say none of us gained a pound thanks to the miles of walking- probably from chasing Disney characters all over the parks!

Again, we would not normally order desserts with every meal, but when they come with the Disney Dining plan, who can pass up that fun?  Believe it or not, they tasted as good as they look.  And wow, they are beautiful!





One of the greatest things about Disney's menus is that they have a wide selection of "allergen free" food- desserts included.  This s'more treat was just for our wheat free gal!  Who did not share!

Gift someone with 621 Gifts!

I love blessing people with gifts.  Which is actually funny, because gifts are not really my love language.  Yes, I am always thankful when someone thinks of me with a special something, but really, I would rather bless them instead.  Because of our nomadic lifestyle, we have friends all over the country and so it can be hard to keep up with the gift giving.  The post office is just not my favorite place to frequent, and I am not good at ordering stuff I cannot see and touch.  There are just too many variables and things that can go wrong.


I have found a solution though, thanks to a friend of mine!  Let the gift giving resume!

Meet Tonya and her husband Dan!  Together they have dreamed big and created a new business called 621 Gifts.  This online shopping and gift giving experience is amazing.  It is a simple idea really.  Pick from a variety of local to the Midwest area products or let them help you pick by choosing their themed boxes, and they will ship these products to anyone you wish. That being said- I did pick winners, if I say so myself.

First up (and eaten for dessert the day the box arrived) were the Sugar and Spice Pretzels and caramel dipping sauce. Best things ever!  Everyone liked it and even our wheat free daughter got in on the action by dipping apples in the caramel.  A box of just five of these might be a good idea!  Just saying.


We also played fair and tried the Buckaroo Brownie Mix, which is Gluten Free, so said daughter did not feel left out.  Yummy as well.  We served them at a get together and even non gluten free friends said they passed the test!

Since fall is coming, I KNOW it is, I also ordered two soup mixes.  I think these are always good gifts to send people who are home bound or sick and even make good housewarming gifts.  We had one a few nights ago, the Veggie Chicken Noodle Soup and the kids loved it.  Next up is the Cheesy Broccoli Soup. 


Last up is the  Cinnamon Streusel Muffin Mix.  Well, not really last, as we ate those last week!  If you have been around Family, Faith and Fridays long enough you already know that this crew loves muffins, so yes, I had to include a box!  They were yummy and Salem asked if we could make more like that.  Next box, I guess!





Why the name 621 gifts?  Tonya and Dan took from Romans 12:6-21 in which spiritual gifts are talked about as well as how we should behave towards one another and then  Matthew 6:21 - For where your treasure is, there will your heart be also.

4 Ways to Save Money While Eating on the Road

Yes, we are finally back from our unexpected "vacation" with dad and are settling back in.  On Wednesday I will share a few fun photos for those of you that are remotely interested. ;)  I finally made it to the grocery store tonight so this family can eat more than just things I scavenged out of the freezer.  Time to get back to real life folks!

But what fun memories we have tucked away.  And yes, we ate our way through more than several states.  Out of the three weeks gone, 7 of those days were actually spent on the road.  For very long periods of time.  Add that up, and that is 21 meals on the road or potentially in a hotel.

Now don't get me wrong, our family enjoys eating out occasionally but it can get old, well, except for the 7 year old who has a thing for restaurants and would eat out every meal if you let him.  But between the expense factor and the fact that one of us has eaten foreign food for 4 months, let's just say that 21 meals out was not going to cut it.


No worries, this momma had a plan!  Not just for our sanity, but to save money!

Yes, you can save money eating on the road.

Here's how-

Pack a cooler!
We actually use two.  One holds all of our things that really do need to stay cool!
Our standard items-
Mayo and mustard
Tortillas
Lunch meat
Apples
Bananas
Rolls
Baby carrots
Fruit
Individual containers of diced peaches, pears, and applesauce
And a few Mountain Dews to keep dad awake!  Despite the HUGE time change and jet lag, my hero drove every minute of the trip except the day we picked him up from the airport.



The other cooler bag fits perfectly between the two second row seats and holds snacks and such.  Many of the snacks for this trip were given to us by a sweet friend (thanks Andrea!!!) and the "such" includes napkins, plastic utensils, and the plastic cups which we use to hold said snacks.




This is our standard lunch on the road, just like it would be at home on any given day.  Much cheaper than a $6.00 meal x 6 people= $36.00 for a bad-for-you lunch!  Plus, I figure that the fewer public restuarants we are in, the less likely we are to pick up random germs!

Take advantage of hotel breakfasts and possibly mid week meals.
Here's the deal.  If you are going to pay for a place to stay (have you seen the cost of rooms these days) you might as well make sure they have a free continental breakfast.  Yes, some hotels' ideas of breakfast are better than others, but most have at least yogurt, juice, fruit, cereal, oatmeal, and bread of some sort.  Most these days even offer waffles or pancakes, and, much to Colby's delight, some even have doughnuts.  We make sure we eat well and often grab a piece of fruit for the road to have for an afternoon snack.

A newer trend at many hotels these days is some sort of buffet for dinner during the week.  I remember when that used to be light snacks, but these days the offerings are quite substantial and by adding a piece of fruit, you could easily have a decent meal.


Share meals at restaurants
Usually by dinner we are ready to be out of the car, are tired of picnic lunches, and want to actually sit down for a meal, so we do usually eat at restaurants in the evenings. One way to save on meals is to share!  Our girls are famous for this when they can find a place with fajitas.  Most restaurants do not mind sharing and often their portions are too big for one person anyway.  Even an order of fries at Five Guys can be split between three in our family! (Anyone else love that restaurant?)

Another way to save costs is to eat lunch, a cheaper meal, in a restaurant, and have your picnic from home for dinner in your hotel room.  Many rooms have microwaves you can use to heat up food you bring and we have even been known to heat water in a coffee maker and make mac and cheese. (yes, when you are on the road as much as we are, you learn to be resourceful)


Pack a crock pot!
Yes I did!  My husband rolled his eyes at me but I am pretty sure he appreciated the home cooked meals. We actually do this quite often, especially if you are going to be in one place for more than a night and if you are out all day sight seeing.  Just pop a roast, chicken, or pork loin in before you head out and when you come back to the room exhausted after a day of fun, your meal will be waiting for you.  I often wonder what the maid service people think, but so far no one has ever said anything to us.  We shared a meal with friends once and they brought their electric griddle along.  It was great and a much easier way to visit old friends than in a restaurant.


No, we are not cheap.  Well, maybe a little, but the reality is that I not only want to eat fairly healthy on the road, but to save money. After all, the money we save on something as trivial as food can then be spent on much better things - like family fun! ;)

Storin' Up

The Simple Life

Who named it that?  Because quite frankly there is nothing simple about living off the land.

My kids have taken to calling me a squirrel lately.  And not because I am easily distracted these days, though that may be true.  But because they think it is funny that I am storing up for the winter.

Why?

Because I can.  And because it saves money.  And because I love fresh food in the winter. And because I am perfectly happy to stay inside all winter long, snuggling with my kiddos and reading a book.  And watching the snow fall.

Seriously!



And so I have dehydrated hash browns


and canned potatoes




Frozen squash


and pumpkin (at .50 per two-cup bag!)



 and apple pie filling and applesauce


and tomato sauce.


And help process 60 some chickens for the freezer.

and a cow is on the calendar!


For the record, when the de-feathering machine stops working, I go on strike until someone fixes it.  I am not a hand plucking kind of gal!  Which is why it is always good to have an engineering student helping with the process who knows how to fix things!.


So while he did all of this...


The old(er) men mostly watched supervised! ;)


And in case you think the girls did not do much, proof- of a little work and a little fun too!


Next on the list of things to do- elderberry syrup!  We have used it in the past and swear by it for staying healthy!

Now, if I could just find a way to stock up on chocolate! ;)  Lots and lots of chocolate.  I think I am going to need it!

Bring on the Pie!

Update June, 2016!- It is hotter here in Nebraska, so we are bringing out this old recipe again for the summer heat!  Still one of our favorites and a popular one for company!


We went from cold to HOT here in South Dakota.  OK, not Texas or Arizona hot, but hot for us!  While you know we love the winter and all the snow here, my kids were starting to get excited about the possibility of hot summer days.  Me, not so much, but I will try hard to not complain.  Too much.

In the meantime, time to whip out some fun summer recipes and have some fun.  I have shared this one before, but I think it bears repeating as it is one of my favorites.  It came from my mother in law and seems to be loved by all.  I often keep a few in my freezer to have on hand for those "just in case" moments!

Now that I have a child that is wheat free I used the extra filling to make two crustless treats just for her!



Lemonade Pie

1 Graham cracker crust
1 can eagle condensed milk
8 oz thawed cool whip
8 oz. thawed frozen lemonade

Mix milk, cool whip and lemonade together and freeze in pie shell!

That's it.  Simple, fast and the perfect treat for a hot day!
